When the temperatures start climbing, my appetite tends to do the opposite.
Heavy meals don’t sound appealing, and standing over a hot stove is usually the last thing I
want to do. If you’re anything like me, summer often means looking for lighter, cooler meals that
still support your health and fitness goals.
The challenge is that even when we’re not as hungry, our bodies still need fuel. We still need
protein to support muscle recovery, energy, and all the activities that fill our summer schedules.
Sometimes that protein comes from grilled chicken or shrimp. Other times, it comes from a
protein shake because another piece of meat on a 90-degree day just isn’t happening.
That’s where this Watermelon Feta Summer Salad comes in.
It’s cold, refreshing, packed with flavor, and takes just a few minutes to throw together. Whether
you’re looking for a quick lunch, a healthy side dish, or something to bring to a summer cookout,
this recipe checks all the boxes.
Why I Love This Recipe
One thing I’ve learned over the years as a nutrition coach is that consistency comes from finding
meals you genuinely enjoy eating.
Many people spend a lot of time searching for the “perfect” meal plan or recipe. But often,
success comes from simple meals that fit your lifestyle and make healthy eating easier.
Summer can make that a little more challenging. The heat often changes our appetite, and
meals that sound great in January don’t always sound appealing in July.
This salad is one of my favorite summer staples because it combines sweet watermelon, salty
feta cheese, fresh mint, and bright lemon juice into a dish that feels light and refreshing while
still helping you build a balanced meal.
It’s quick enough for a weekday lunch, easy enough to bring to a cookout, and simple enough
that you’ll have it memorized after making it once or twice.

Make It a Complete Meal
While this salad is delicious on its own, pairing it with a quality protein source helps create a
more balanced meal and supports your protein goals.
Try serving it alongside:
● 4–6 ounces grilled chicken breast
● Grilled shrimp
● Rotisserie chicken
● Grilled salmon
Or, if the thought of eating another piece of meat on a hot day doesn’t sound appealing, a
protein shake can be a great option.
Lately, I’ve been loving Phormula-1 Clear in Rainbow Sherbet. Unlike traditional creamy
protein shakes, it’s light, refreshing, and tastes more like a summer drink than a shake. It’s an
easy way to get high-quality protein without feeling weighed down, making it perfect for hot days
when your appetite isn’t quite what it normally is.
Whether you’re pairing it with this salad for lunch, enjoying it after a workout, or using it to help hit your protein goals for the day, it’s become one of my favorite summer nutrition staples.
Optional Add-Ins
Want to switch things up? Try adding:
● Cucumber for extra crunch
● Blueberries for a pop of sweetness and color
● Arugula for a peppery bite
● Pistachios for texture and healthy fats
● Thinly sliced red onion for a little sharpness
Keep It Simple This Summer
The best meals aren’t always the most complicated ones.
Sometimes they’re the simple recipes you can pull together in just a few minutes that help you stay consistent with your goals without feeling like you’re “on a diet.”
This Watermelon Feta Summer Salad has become one of my summer staples because it’s
refreshing, easy, and adaptable. Pair it with your favorite protein source, enjoy it outside if you
can, and remember that healthy eating doesn’t have to be complicated.
